This booklet describes the marmalade recipes collected by Elizabeth Rainbow and Elizabeth Thomas during the second half of the seventeenth century. These two women used apricots, cherries, gooseberries, pippins and quinces as well as oranges to make their marmalade.
These were found in the archives at Dalemain and became the inspiration for the Marmalade Festival.
